A Roadmap to becoming a sustainable food chain.

BACKGROUND
Bun2bun is the leading vegan burger joint in Helsinki Finland. Their goal has been to reduce the emissions of the fast food industry and to lead by example. However, with the pandemic, the bun2bun team decided to re-evaluate its values and goals. The aim is to take action in becoming –or attempting to become– a forerunner in the sustainable food industry and demonstrate that it is not only possible, but it is a model that can be replicated and expanded.
PROJECT
My role in this project has been to create a strategy for bun2bun. This strategy is something that must be viable, realistic, and most importantly something that the client feels comfortable with and willing to carry on. I wanted to take the role of a mentor or coach, I met several times with the client to co-create the strategy. I became a facilitator to support the design of a strategy that would help fulfill the vision.
Parallel to the co-creation aspect, I conducted auxiliary research. A sustainability strategy needs to be based on existing scientific knowledge. For this reason, I find it fundamental to conduct thorough research on the topic. I focused on existing data regarding the biggest polluters in the industry, as well as existing trends of production and consumption that can guide bun2bun in its mission.
Once enough information was gathered, we created different visions of paths to take to reach the goal. The process was conducted together with the Moxworld team. These visions were presented to the client and the most compelling one was chosen. Lastly, together with the client, we ideated some stepping stones to bring about the vision. This is what later on would become the roadmap.
OUTCOMES
A report
A compact report outlaying the motivations and goals behind the sustainability vision, as well as the values guiding bun2bun to make a change. The report is for personal purposes, but also as a support material to help communicate this vision with customers, clients, and suppliers.
An Action Plan
A visual plan of potential actions to take over a period of 3, 6, and 10 years. The action plan can be visualized above.
LEARNINGS
This was a great opportunity to work hand in hand with a client and work as, what I like to think of, a mentor. I facilitate the process and contribute with my knowledge and skills. I have had the idea that when I work in sustainability strategy I want to create something that can be applicable, something relevant but most importantly I want the client to feel confident that the reasons behind the changes needed are understood. In other words, I want to empower clients and I want them to feel confident and understand the work that is required. At the same time, the project must be in line with the client´s individual values and interests, which is why more than acting as a consultant I want to act as a mentor.
